Florence Nesbiit wrote in 1915:

“With plenty of money the average woman can easily furnish her family with comfortable living conditions and good food. The smaller the amount of money on which the home must be run and food bought the greater is the need of the home-maker for wisdom and skill in management.”

This holds true in today’s society where women earn less then men and a large percent of households are run by single women. So what can you do as a women of the 21st century to ensure that your family has the best and healthiest to eat will managing on a small amount of available income?

You can make a healthy meal for less than $10. You just need to be creative. Being economical can bring out your innate creativity…just let it out.

So if you are interested in recipes, you can check out Poor Girl Eats Well website. Here is one that I found to be quite tasty however since I eat only seafood, I modified it:

Salmon Lettuce Wraps
4-6 butter lettuce leaves

1 1/2 c cooked salmon, shredded
1/2 c carrots,shredded
serrano peppers, seeded, deveined, and finely chopped
Small bunch fresh cilantro, chopped
1/3 medium red onion, thinly sliced
1/4 c rice vinegar
1/4 c soy sauce
2 T honey
Rinse the butter lettuce and pat dry. To prepare the dressing, combine the rice vinegar, soy sauce and honey together in a bowl. Whisk vigorously until completely combined and set aside. In a large bowl combine the salmon, carrots, serranos, onion, and cilantro. Add about 3/4 of the dressing and toss together well. Assemble your wraps by spooning a generous amount of the salmon mixture. Drizzle the tops of each with a little more dressing, roll ‘em up, and enjoy!
